Fougasse

Today I cleaned my kitchen and both the ovens, it was spic and span!  I love it when it’s all shiny, but who knows why I just HAVE to bake right after.  Maybe to make sure it all still works?  I still had some fresh yeast left over from last week and I had to do something with, or else it would have gone bad (what a waste!).  I decided to make fougasse, for the very first time.  Fougasse is the french version of the italian “focaccia” and has a specific tree-like shape.  I used the recipe from Levine’s kitchen.  I made half of them ‘plain’, the other half with olives and sundried tomatoes.

This is Levine’s recipe:

  • 500 gr wheat flour
  • 30 gr fresh yeast (or 10 gr dried yeast)
  • 10 gr salt
  • 25 gr olive oil
  • 300 gr water (room temperature)
  • semolina flour (or white flour)
  • some olives, cut in small pieces
  • some sundried tomatoes, cut in small pieces

Make a dough with the above ingredients.  Let it rest 15 minutes.  Knock back the dough to remove excess air bubbles.  Put the dough in a lightly oiled bowl and leave to rest for about 45 minutes.

Put some (semolina) flour on your workplace and put the dough on your workspace.  I then divided the dough in 2 equal parts.  I took one half and rolled it out, then cut it in 3 equal pieces.  With a knife make cuts in them, as shown in the pictures.

Roll out the other half of the dough.  Put the olives and sundried tomatoes on 2/3 of the dough.  Fold the 1/3 without filling over the filling, then fold the other piece over it.  Now roll out the dough again.  Cut in 3 equal pieces and make cuts.

Put the fougasses on baking trays and leave to rest 20 minutes.  Preheat the oven to 230°C (445°F).  Bake the fougasses for about 12 minutes.

Vandaag heb ik mijn hele keuken een flinke poetsbeurt gegeven, ook beide oven, alles blonk!  Ik vind het leuk als alles schoon is, maar om 1 of ander reden MOET ik dan wel onmiddelijk iets gaan bakken.  Misschien om te zien of allex nog werkt?  Ik had nog verse gist over van vorige week en moest die dringend opgebruiken, anders kon ik het één van de dagen weg gooien (wat een zonde!).  Ik besloot fougasse te bakken, de eerste keer voor mij.  Fougasse is een beetje de franse versie van de italiaanse “focaccia” en heeft een heel eigen vorm, een beetje als een boom.  Ik heb het recept  uit de Keuken van Levine gebruikt.  De helft maakte ik gewoon zo, de andere helft met zongedroogde tomaten en olijven.
