I’m making pasta Bolognese again for my family, so I thought I’d share the recipe for my Bolognese sauce. I’m having Zucchini Bolognese again 😉 .
Ingredients for 5 persons (+ leftovers):
- 500 gr ground beef
- 500 gr pork
- 1 tablespoon olive oil
- 1 onion, chopped
- garlic, chopped
- salt, pepper, basil, chilli flakes
- 750 gr passata
- 1 tablespoon of tomato paste, or if you can find it “macinata” (minced sun dried tomatoes)
Heat the olive oil in a heavy based pan. Add the onions and the minced meat and brown. Add the spices, passata, tomato paste and some water and stir. Let cook on low for about 2 hours.
For the zucchini (for 1 person): preheat the oven at 175°C. Cut 2 small zucchini in thin ribbons. Mix with spices and herbs and 1 teaspoon of olive oil. Put in the oven for about 15 minutes. Serve with the Bolognese sauce and some freshly grated Parmesan Cheese.
Update: You could also use spaghetti squash instead of zucchini!
