Homemade veal burgers

I got the idea to make my own hamburger buns from Es’ Factory , who’s food pictures are always so succulent!  But of course I had to give it my own twist, replacing white flour by spelt flour and silken tofu instead of the egg.  This makes it a vegan bread, but the burgers we put inside obviously weren’t (yet).  Anyway, the kids just loved these buns (and burgers) and Lou even prefered my homemade spelt buns to the white buns of the bakery.

For the bread:

  • 1 cup lukewarm (soy) milk
  • 1 tablespoon of soy margarine (or butter if you prefere, or you could even use olive oil)
  • 2 teaspoons of dry yeast
  • 3 cups of spelt flour (if you like it less dark, then use half/half spelt and white flour)
  • 2 tablespoons of flour improver
  • 1 tablespoon of  cane sugar
  • 1 teaspoon of sea salt
  • 1/4th cup of silken tofu (or 1 egg)

For the burgers:

  • 500 gr minced veal
  • 1 egg (or 1/4th cup of silken tofu, for less cholesterol)
  • seasoning to taste

Melt the grease in the milk and mix in the yeast.  Put all the other ingredients for the buns – except the salt – in the bowl of your mixer, poor the milk in and mix briefly.  Add the salt and mix for about 6 to 8 minutes.  The dough will be quite sticky.  Put a damp cloth over the bowl and leave it to rest for about 30 minutes.

Remove the dough from the bowl onto a little flour on your working space.  Knead briefly untill you have a soft but firm dough.  Cut in 8 even pieces and make 8 balls.  Put the doughballs onto baking tray, which you have greased or put a baking sheet on, cover with the damp cloth again (or turn your steamoven to 70° and put them in there) and leave to rest another 30 minutes.

Preheat your oven to 200°C.  Brush the buns lightly with a little (soy)milk and sprinkle with sesameseeds.  Bake about 15 minutes.

In the meantime mix all the ingredients for the veal burgers and make burgers using a serving ring (or just make balls and flatten them with your hands).  Bake in a hot frying pan on both sides untill they are nice and brown outside, but still a bit pink on the inside.

Open the buns with a knife, put some salad and sliced tomatoes in it, as well as pickles, red onions and a sauce of your choosing.  Serve with freshly baked fries.
